anyone know if this size rim would fit on the zed - 18 inch diameter, 10.5 and 11 inch wide with +7 offset

Realistically, no they wouldn't. If you were determined, you could make them fit with a lot of work. You'd have to roll and flare your guards heavily, run around 3-4 degrees of camber and stretch something ridiculous like 245's onto them. Even then, you'd have about an inch of poke outside the guards.

Here's a similar set up. You'd have to do even more than him, and you'd just rip through tyres.

Zedboy, what rims are you running in your sig pic?

 

iirc they're the track v.2 rims you get on the yanky 350z's.

mucho love towards them, if you can get your hands on them.

staggered sizes too though.

 

Rays Engineering Track V.2 18x9 fronts and 19x10 rears both with +30 offsets.
