Does anyone actually replace these when they do their shocks or is it a waste of time for the most part? Is there anywhere that stocks them in Australia?

    Make them

Its straight forward, I used a slightly thicker gasket material than the stock paper thin shocker gaskets for the front and rear. Trace round the old gaskets(if you have them) onto the new gasket sheet, and simply cut them out.

what do these gaskets do anyway?

seems like its a odd thng how have a gasket there.

maybe its to do with reducing NVH levels (noise/vibration/harshness)

You answered your own question- reduce noise/ vibration but maintain firmness on the mount (hence why they don't use rubber etc.)
