Brake shims - do I want them

    Sounds like some pretty crappy dogbone adapters.

    Also there are quite a few different model Wilwood calipers. Again sounds like the wrong choice for the application.

    The superlite range was the ones I'm referencing and yes, I don't think they are suitable for the zed at all, and even with good dogbones, you've moved the calliper off the hub, it's going to have some flex.

    Sure, but every aftermarket big brake kit including Brembo GT, StopTech, etc, all use dogbones of some form. Quality dogbones should not introduce flex, of course it's better if you have radial mount calipers.
